Next time you dig into a steaming pile of locally harvested oyster clusters, consider the source… our SC oystermen. Our oystermen who harvest wild, SC Oysters work incredibly hard, often in less than ideal weather conditions, for long hours to collect what might seem like a small number of bushels. The true oystermen are often the second or third generation of their families whose livelihoods depend on tides, rains, temperature, and the health of the species. An oysterman’s job is best described as “picking” oysters because not only does he collect the clusters from the pluff mud, but he also selects oysters ready for harvest, while leaving those that need to grow larger until the next year. As stewards of our coastal environment, our oystermen are essential to ensuring that SC oysters and their habitats are not destroyed. Thank you, oystermen!
